Meet Catherine

Welcome! I am so glad you’re here! My name is Catherine Moring, and I am a registered dietitian nutritionist with a PhD in Health and Kinesiology and a master’s degree in Health Promotion. I’m a Certified Diabetes Care and Education Specialist and am Board Certified in Advanced Diabetes Management. I am also a former Advanced Level Whole30 Coach. More importantly, I am a spouse to my wonderful husband, Rance, momma to precious Ollie, and bonus mom to Mac and Tanner!

I specialize in working with clients to overcome health concerns and various ailments using holistic and functional approaches, so they can achieve optimal physical health and emotional well-being and THRIVE. 

My goal is to discover the underlying cause of your symptoms, help you adopt a clean anti-inflammatory diet, and provide life changing skills and personalized strategies designed to help you heal and become the best version of yourself.

While I have worked with clients with varying health concerns and goals, my expertise is in conditions related to inflammation and/or insulin resistance including obesity, anxiety, depression, PCOS, endometriosis, pre-diabetes, diabetes, high blood pressure, high cholesterol, thyroid concerns, hormonal imbalances, and digestive distress.

I also have a special place in my heart and practice for women experiencing disordered eating patterns as well as supporting women who are pregnant, or in their post-postpartum period. I’m passionate about supporting women through this special and transformative time.

My personal journey to optimal health really began when I was in my late twenties. I was finishing graduate school and was stressed. I was eating plant-based, consuming whole grains, very little processed food, and following the dietary guidelines to a tee… yet, I felt terrible.

I had several symptoms of concern and my doctor kept giving me more medications. My doctor never tried to help me understand the root cause of my illness. And never mentioned that some of my symptoms, if not all of them, could be related to or made worse by the foods I was eating.

I was experiencing brain fog, ADD symptoms, debilitating anxiety, panic attacks, and insomnia. I was prescribed medications that I was told were necessary to treat my symptoms. I also had joint pain, chronic sinus issues, low energy, and insecurities.

I knew something had to change! I was sick of being sick and started researching alternative and holistic approaches that ultimately radically transformed my health.

Fast forward a few years and I had discovered a whole world of holistic health and nutrition! A few of the key concepts I learned along the way that helped me the most were using food as medicine, the importance of movement, inflammation from food as a root cause of disease, the microbiome and healing the gut, the importance of healthy dietary fat, and the gut brain connection.

One of my biggest discoveries was that the national dietary guidelines are a one-sized fits all approach that don’t work for most, and often do more harm than good; the dietary advice most of us are getting is not helpful. Most of all, I figured out my underlying food sensitivities, plus my macro and micronutrient needs, and began to craft the optimal diet and nutrition plan for myself.

After just a few weeks on this new protocol, ALL of my health concerns went away, and I stopped taking all prescription medication. Not only did my health concerns, confidence, and energy improve, but for the first time in years I could sleep, focus, engage, and was not suffering from sinus congestion or pain. I also experienced food freedom and true recovery from over a decade of disordered eating patterns.

As a teenager, I experienced a tremendous amount of pain and trauma and developed a serious eating disorder that led to two hospitalizations and almost a decade of treatment and therapy. Like many of us, I turned to food as a coping mechanism and as something I could use for comfort and control in a world that was spinning out of control. Recovery from eating disorders is arguably the most difficult addiction to overcome because you cannot simply quit eating like you can drugs and alcohol, you must develop a healthy relationship to food.

An integral part of my healing and recovery from disordered eating was my understanding how to use food as medicine, discovering my food sensitivities, and not fearing fat. I completely changed my diet and was freed from the calorie counting prison that doesn’t serve anyone.

I will never forget my dietitian telling me, a calorie is a calorie, just eat x number a day. I now know this could not be further from the truth! Food is information and everything we eat is moving us closer to health and vitality or closer to disease and suffering.

Food freedom is the ultimate freedom for anyone who has ever been caught in the dieting or disordered eating arena. If you know, you know! Whew, what freedom, to know how to nourish my body with what it truly needs. If you’ve battled with disorder eating of any kind, I can help.

The nutrition changes I’ve made along my health journey have also served me immensely in conceiving our baby, through pregnancy, and during my postpartum period.

When I was 35,  baby fever hit me out of nowhere! One problem, my husband had a vasectomy about 10 years prior. After his reversal, the doctor told us given my age and his age (44) along with how long it had been since he had the vasectomy, our chances of conceiving were around 50/50 and to not expect anything for at least a year. That was August and by late December we were pregnant.

I am confident my diet changes and our health going into that process made all the difference in the world in our ability to conceive. I went on to have a very healthy advanced maternal age pregnancy, natural delivery, and a healthy almost 8- pound baby born at 41 weeks. Food, movement, and sunshine are now my main sources of medicine, and this can be true for you as well. My experience healing my own health issues holistically lit a fire in me to support others in this way.

I went back to school and became a registered dietitian so I could make this into a career and use my background in health and kinesiology, combined with my expertise in nutrition, to help clients transform their lives, heal from disease, and end the unnecessary suffering and reliance on big Pharma.

Through my coaching, I use an array of tools and resources to help clients reach their goals and stop suffering from disease and poor physical and emotional well-being. I use protocols such as Whole30, Paleo, Ketogenic and the Auto-Immune Protocol to help clients identify food sensitivities and release habits that no longer serve them. I also use several different behavior change mechanisms and models including motivational interviewing and goal setting.

Too many of us are suffering unnecessarily and relying on quick fixes, prescription medications, and crash diets that just don’t work long-term. We never truly heal or feel great because only long-term habit changes make lasting impact.
